  Mexican Lasagna - The Questionable Homesteader

I have to confess, I am a huge fan of both Lasagna and Fijitas. So when someone suggested I try a Mexican Lasagna I was sold. Then I started looking for recipes for this thing called Mexican Lasagna, and had a hard time finding any…. the best one I found said to make taco filling, and use that instead of the meat filling for a lasagna, and replace the lasagna noodles with tortillas. 

So this is my version… don’t know it it’s correct, but it’s one of my go too’s

Red Layer
  1. 2 sm Yams, or 1 Lg, chopped
  2. 1 Carrot, shredded
  3. 1 Parsnip, shredded
  4. 1 Celery Stalk, chopped
  5. 1 Red Onion, chopped
  6. 3 Garlic Cloves, minced
  7. 1 tbsp Chili Powder
  8. 1 tsp Ground Cumin
  9. 1/2 tsp Cajun Seasoning
  10. 1 cup Stewed Tomatoes
  11. 2 cups Mild Salsa
White Layer
  1. 3 cups Cottage Cheese
  2. 1/4 cup Fresh Parmesan Cheese, shredded
  3. 1/4 cup Parsley Flakes
  4. 5 cups Fresh Spinach, chopped
  5. 1 Egg
Other Layers
  1. 3 med Tortilla Shells, cut into strips
  2. 1 cup Mozzarella Cheese, shredded
Red Layer
  1. Combine all ingredients for this layer in the crock pot. Cook on Low for 8 to 10 hours (or over night).
White Layer
  1. Mix all ingredients together for the white layer.
Lasagna
  1. Spread a small amount of the salsa mixture on the bottom of the pan.
  2. Lay strips of the tortilla shells over the salsa mixture.
  3. Spread a thin layer of the cottage cheese mixture over the tortilla shells.
  4. Spread a thin layer of the salsa mixture over the cottage cheese mixture.
  5. Lay strips of the tortilla shells over the salsa mixture.
  6. Spread a thin layer of the cottage cheese mixture over the tortilla shells.
  7. Spread a thin layer of the salsa mixture over the cottage cheese mixture.
  8. Continue layering until you run out of both mixtures, make sure you finish layering with the salsa mixture.
  9. Spread the mozzarella cheese over the top of the final salsa layer.
  10. Place in pre heated oven at 350 and cook for 60 minutes.
